LEARN HOW TO MAKE A QUICK SUMMER ORZO SALAD RECIPE AT HOME! LAY HO MA! This quick summer salad recipe is simple and yet brings incredible complex flavours and textures. If you have pesto made on hand, then this will be a breeze! Join me in this episode and learn how to make a fast summer orzo salad recipe right at home! Let's begin SALAD INGREDIENTS: 250g cherry tomatoes salt and pepper to taste 1 tbsp olive oil 2 cups canned chickpeas 1/2lb orzo 300g asparagus 2 peaches PESTO INGREDIENTS: 40g basil 1/4 cup almonds 1/4 tsp salt pepper to taste 1 piece garlic 50g parsley 2 tbsp hemp hearts 1/3 cup olive oil lemon wedges Directions: 1. Preheat the oven to 400F 2. Bring a pot of water to boil for the orzo 3. Slice the cherry tomatoes in half and place them into a mixing bowl. Season with some salt and pepper, then toss to coat 4. Place the tomatoes onto a tray lined with parchment paper 5. Rinse and drain the canned chickpeas and add them to the mixing bowl. Toss the chickpeas with the residual oil. Place them onto the same baking tray as the tomatoes and spread everything out 6. Bake in the oven for 20min 7. Boil the orzo to package instructions (in this case 8min) 8. Break off the wooden ends of the asparagus and chop into bite sized pieces. Place the asparagus into a mixing bowl, then season with salt and pepper and a drizzle of olive oil 9. Toss the asparagus to coat. Then, transfer onto another baking tray lined with parchment paper 10. After 20min, add the asparagus into the oven and bake for another 15min 11. When the orzo is cooked, rinse and drain in cold water. Place the orzo in a large mixing bowl 12. Make the pesto by adding the pesto ingredients to a blender and blend on medium low (use a tamper is necessary) 13. When the veggies are roasted, let them cool for 5-8min 14. Thinly slice the peaches and add them to the orzo. Assemble the salad by adding in the roasted veggies and pesto. Mix well to combine 15.     @Chompchompyerded3 years ago Tried this again tonight and I have to say that this is a dangerous recipe. It is so good that it will leave your mouth screaming for more even when your tummy is saying it's full! It's a discovery in every bite as you eat spoonfuls of different combinations of things. The roasted tomatoes, asparagus, and chickpeas are good each on their own, but when you get a mix of several of them it turns into fascinating combination of flavours. The peach slices add just that much more to the exploration and surprise. I remained fascinated by the flavours, as no two bites tasted the same. The basil pesto ties it all together just wonderfully, and the texture of the orzo makes it just that much better. This is a dish to be savored, not just eaten. I paused on every bite rolling it on my tongue and the roof of my mouth chewing every bit of flavour out of each mouthful before swallowing. This is a treat! a very special treat! ... 7

    @Chompchompyerded3 years ago So many things from my garden in this! I can go right out and get the cherry tomatoes, asparagus, basil, parsley, and garlic. I grow a lot of chick peas and other legumes each year an thought the time to harvest this year's crop has not come, I still have some dry leftover from last year. I haven't yet mined any salt, or grown any pepper, hemp, peaches, or olives (needed for olive oil) as these things do not grow where I live, but that's still a huge savings when so much of it is available just picked out of my own garden. That level of freshness does things to food that are just amazing!

    Update:
    I had this for supper last night, and it was wonderful! The peaches really added a great touch to it which was totally unexpected both as an ingredient, and to my pallet, and though they were unexpected they really were the jewel in the crown! From the first bite with peach in it on the end of the meal it was like finding a hidden treasure each time I had a bite with peach in it. It was so very delightful that I'm going to have to have it again. I know it will change the flavour a bit, but I think next time I might try it subbing brown rice for the orzo. I have an excessive amount of brown rice owning to having found a really great sale on it, and hopefully this will be something I can use some of it on. The texture will be similar, but flavour, not so much.
    If I might make a recommendation, I would like to say that if you can get a hold of peaches grown in western Colorado, get them! They have the best flavour of any peach on the North American continent, and the colour is amazing! If they are from the eastern or southern part of the state they will not taste as good. I'm sure it has to do with the soil. They usually come available in August and September, and sometimes you'll see a few start trickling into the stores in late July. I was afraid we might not see any again this year, but with the borders back open they have been showing up. The ones grown in the right area of Colorado have a deep burgundy colour with a patch of the usual yellow and peach (of course) on shaded side. When you cut them open you'll find that they are juicier than most other peaches. If they are from that area, the stone will also have that deep burgundy red colour which the outside has.
