Gajar Ki Barfi Recipe in English: Ingredients: -Doodh (Milk) 1 litre -Gajar (Carrots) grated ½ kg -Cheeni (Sugar) 1 & ½ Cups or to taste -Elaichi seeds (Cardamom seeds) crushed 1 tsp -Khopra (Dissected coconut) ½ Cup -Badam & Pista (Almonds & Pistachio) chopped ½ Cup -Khoa ½ Cup -Ghee 2 tbs -Ghee 1 tbs -Khoa ½ Cup -Cheeni (Sugar) 1 tbs or to taste -Khopra (Desiccated coconut) -Nuts Directions: -In pot,add milk and bring it to boil. -Add carrots,mix well and cook for 4-5 minutes. -Again bring it to boil,cover & cook on low flame for 15-20 minutes and keep stirring in between then cook on medium low flame until milk dries up and keep stirring in between. -Add sugar and mix well. -Add cardamom seeds,desiccated coconut,almonds & pistachios and mix well. -Add khao and mix well. -Add ghee,mix well and cook until it leave the sides of the pot. -In frying pan,add ghee and khoa,mix well. -Add sugar and mix well until sugar dissolves & let it cool. -Now take cooked carrot mixture on your palm and spread it,add cooked khoa and cover it to make a ball. -Sprinkle desiccated coconut & nuts. -On mould,add cooked carrots mixture & press it. -Now add cooked khoa and press it. -Add desiccated coconut and nuts & refrigerate for 30 minutes. -Cut into desired shapes & serve. Recipe in Urdu: Ajza: -Doodh (Milk) 1 litre -Gajar (Carrots) grated ½ kg -Cheeni (Sugar) 1 & ½ Cups or to taste -Elaichi seeds (Cardamom seeds) crushed 1 tsp -Khopra (Dissected coconut) ½ Cup -Badam & Pista (Almonds & Pistachio) chopped ½ Cup -Khoa ½ Cup -Ghee 2 tbs -Ghee 1 tbs -Khoa ½ Cup -Cheeni (Sugar) 1 tbs or to taste -Khopra (Desiccated coconut) -Nuts Directions: -Pot mein doodh dal ker ubal lein. -Gajar dal ker ache tarhan mix karein aur 4-5 minutes kliya paka lein. -Dubara ubal anay ka bad dhak dein & halki ancch per 15-20 minutes kliya paka lein aur bech bech mein chamcha chalatay rahein phir halki darmiyani ancch per doodh sukh janay tak paka lein aur bech bech mein chamcha chalatay rahein. -Cheeni shamil karein aur ache tarhan mix ker lein. -Elaichi seeds,khopra,badam & pista dal ker ache tarhan mix karein. -Khoa shamil karein aur ache tarhan mix ker lein. -Ghee dal ker ache tarhan mix karein aur pot ki sides chornay tak paka lein. -Frying pan mein ghee aur khoa dal ker ache tarhan mix ker lein. -Cheeni shamil karein aur cheeni ghul janay tak ache tarhan mix karein & thanda ker lein. -Ab cooked gajar ka mixture ko haath per pheela lein aur cooked khoa dal ker cover karein aur ball tayyar ker lein. -Khopra aur nuts sprinkle ker lein. -Mould mein cooked gajar ka mixture dal ker press karein. -Ab is ka upper cooked khoa dal dein aur press ker lein. -Khopra aur nuts dal dein aur 30 minutes kliya refrigerate ker lein. -Desired shapes mein cut ker ka serve karein.
